Rainbow Pizza by SuperChefs UK

Easy Rainbow Pizza
Prep time: 10 mins
Cook time: 15-20 mins
Serves: 1-2 people (depending on the size of your flatbread!)
For the base we used a shop bought garlic and herb flatbread
2 tablespoons passata
Grated mozzarella or cheddar
Your favourite rainbow coloured veggies (red, orange, yellow, green, purple)
Cherry tomatoes
Mango chunks
Pineapple chunks
Green pepper
Red onion
Pre-heat your oven to 200C, Fan 180C, Gas Mark 6.
Place your flatbread on a lined baking tray.
Spread over 2 tablespoons of passata and cover with grated cheese.
Next, prepare your favourite rainbow coloured vegetables.
Cut 3 cherry tomatoes into quarters, snipped some broccoli florets (the stalks are just a bit too crunchy on pizza), diced 1/4 green pepper and 1/4 small red onion.
Arrange your toppings on the flatbread in the order of a rainbow and bake for approximately 15-20 minutes, or until the veggies are cooked, cheese is bubbling and base is lightly golden brown.
Serve with a lovely side salad for the perfect after school dinner.
