Coconut, Pineapple and Lime cake

(Would fit a 6inch cake tin, double the ingredients for an 8inch cake tin)

  • 3 free range eggs
  • 150g of unsalted butter
  • 150g of self-raising flour
  • 175g of caster sugar
  • 100g of fresh grated coconut (fine desecrated coconut can be used instead)
    The zest of 1 lime
  • Half of a fresh pineapple chopped-150g, collect the juice- 150mls (Tinned pineapple chunks can also be used instead)
  • 1 vanilla pod (Vanilla extract can be used instead, approximately 1tsp)


– Preheat your oven to 175c and line a cake tin with baking paper and set aside

– Whisk the eggs, butter and sugar together until pale in colour cut and scrape the vanilla seeds out and add, mix well until seeds are well combined.

– Add the flour and mix, not to worry if the mixture looks a little dry just add half of the pineapple juice a little at a time until well combined.

– Add the coconut and mix well. Cut the pineapple into smaller pieces and add (Add the rest of the juice if the mixture is still dry)

– Grate and add the lime zest, mix and pour into your cake tin.

– Cook for 45 mins (Cook for a further 10-15mins if needed as ovens vary)

Caramelised pineapple garnish (Optional) Ingredients

  • 100g granulated sugar
  • Pineapple pieces

-In a small pan heat the sugar until it starts to change colour and completely melt at this point add the pineapple pieces and mix for a few minutes, work quickly as the sugar will burn.

-Pour over your cake and decorate with a few lime zests and enjoy.
