Cory Scott is Head Chef at The Clifton in Bristol. The Clifton opened in July 2023 as part of the group that owns Hare & Hounds in Aberthin and Heathcock in Llandaff. They have a Michelin Bib Gourmand, and have just been awarded No. 70 in the Top 100 Gastropubs List.
Cory cooks on a custom made Parrilla Grill, so is cooking over fire, with big focus on sharing and feasting dishes. The Clifton aim to build strong relationships with artisan suppliers in the surrounding Bristol area, as well as using produce from their own smallholding. As with the Group’s other pubs, seasonality is at the heart of what they do, and the focus is on short supply chains. The food ethos echos ‘Nose to Tail’ British cooking, with the influence of the wood fire.
