Born and raised in Mexico City, Edson has worked all over Mexico, spending time training at Casa Oaxaca, one of the San Pellegrino Latin America’s 50 Best Restaurants, under the tutelage of renowned chef Alejandro Ruiz. Edson also worked as head of menu innovation for the Wahaca restaurant group, where he worked closely with co-founders Thomasina Miers and Mark Selby. 

Alongside his wife Natalie Feary, Edson launched Santo Remedio as a way to bring the vibrant flavours of their home, Mexico City, to Londoners. What started as an idea in New York, and later a food stall in Shoreditch, has evolved into a critically acclaimed restaurant in London Bridge and a Mexican café in Shoreditch.
