MONO’s Head Chef, Francesco Ascrizzi, learned the secrets of traditional Italian cooking from his grandmother in Calabria. When it comes to cuisine, Francesco believes in curiosity, creativity and simplicity. Having worked in many celebrated fine dining establishments from Sicily to as far as Bermuda, Mayfair and now Edinburgh, he’s excited to bring his award-winning international expertise to the Foodies Festival.
