Graham has enjoyed a remarkable career spanning thirty-plus years, with experience in five-star hotels, Michelin-starred restaurants, and various retail operations. He began his journey in some of London’s legendary hotels, earning recognition as Executive Pastry Chef at the prestigious Lanesborough and Mandarin Oriental hotels in Hyde Park. Throughout his operational tenure, he received numerous accolades, including five UK Tea Guild Best Afternoon Tea awards from 2005 to 2010, a bachelor’s degree and the honour of UK Pastry Chef of the Year in 2007.

Graham embodies a unique blend of professionalism, innovation, restraint, and empathy in his mentorship of young chefs and in his management of operations. A key figure in the UK’s and international pastry fields, he has judged various competitions, including the UK National Chef of the Year and the Annual Awards of Excellence. Additionally, he has represented the UK as a judge at the Global Final of the World Chocolate Masters. His many appearances on both online and offline television, along with various interviews, have solidified his status as one of the UK’s most esteemed and influential pastry chefs today.

Over the past six years, Graham has cultivated the Longboys brand from its inception, expanding to three locations, securing stockists like Harrods, and launching an events division that caters to festivals, corporate gatherings, and beyond. Along with his consultancy work and wholesale business Smart Patisserie.
