Joshua Cutress is Head Chef at London’s only Michelin-starred pub, the Harwood Arms, in Fulham. He has come through the extraordinary training ground that is Brett Graham’s The Ledbury (Graham co-owns the Harwood Arms) and joined the Harwood Arms as sous chef in May 2021.
Before joining the Harwood Arms, Cutress completed a three-year course at Westminster Kingsway College, enjoying a stage at The Ledbury during that time, then worked with Phil Howard at The Square in 2016 for a year. He moved to The Ledbury in 2017 until the restaurant was closed during the Covid pandemic, then onto the Harwood Arms post-pandemic taking over as Head Chef in February 2023.
Cutress and his kitchen stay true to the Harwood Arms commitment to celebrating game and extending the use of the whole animal with stunning sharing dishes and generous Sunday roasts.
