Lee Skeet trained under Gordon Ramsay and Marcus Wareing before taking the helm at Michelin starred- and world’s best restaurants listed- Hedone. He opened his acclaimed restaurant Cora in 2022 which fully booked for the whole year, before relocating to directly opposite cardiff castle in 2023 and opening a second bar and restaurant Jackson’s on the ground floor.
