Growing up in an Italian family of foodies, I had a love of food from a young age & knew this would be where I developed my career.
My early career included stints at Michelin starred Number One at Balmoral, and was awarded Young Scottish Seafood Chef of the Year award. Also working with the talented team at Brian Maule’s acclaimed Chardon d’Or, both inspired me to continue my career to become a restauranteur myself.
Beginning with ‘111 by Nico’ [now 111 by Modou], my philosophy was to create a unique fine-dining experience for guests, whilst simultaneously launching an apprenticeship programme. This programme offered young people that have faced enormous challenges in life the opportunity to share my passion for cooking, giving them the drive and the tools needed to become top chefs themselves. Now owned by Modou Diagne, one of the first chefs who joined me back in 2015.
This again inspired me to launch ‘Six by Nico‘, my biggest and most exciting challenge to date.
Every six weeks, Six by Nico takes guests on a thrilling journey through time, spaces and places with a unique and affordable six course tasting experience. Making tasting menus an accessible experience for all was at the forefront of my aim with Six by Nico, as they are all too often seen as an expensive luxury, that most would not think about enjoying.
