Starting out washing dishes in Plymouth in 2017, Oscar has climbed the ranks through the kitchen, completing an apprenticeship in Exeter and working in several restaurants by the sea and finally moving to Brighton to work at Riddle & Finns. This mix of restaurants has influenced Oscar to use all the produce the sea has to offer to create dishes that challenge people’s preconceptions of seafood. 

Oscar took the role of Head Chef at the Lanes site a year ago and has since focussed on creating an environment of development and excitement. Curating ever-changing specials and set menus alongside the tried and tested core menu, Oscar strives to provide a stimulating dining experience.
