Paul Barker is the co-founder of multi award-winning Cinnamon Square based in Rickmansworth. The bakery, which was founded in 2005 is synonymous with its namesake, the Cinnamon Square Bun. The bakery is also a member of the Real Bread campaign which advocates breads made without additives.

Paul is a professional Master Baker with over 35 years in the industry. His extensive career has included experience in craft baking, research and development, technical management, and he is also a qualified flour miller. He is passionate about sharing his knowledge and expertise and is the author of two baking books, Cinnamon Square, A Measured Approach and Naturally Fermented Bread.

In 2014, Paul appeared on Britain’s Best Bakery and won the South East England round and went onto the quarter finals. Cinnamon Square accolades includes the Baking Industry Awards, Quality Food & Drinks Award, Worlds Bread Awards and Great Taste Awards.
